Green Beans Rice
serves : 3-4 portions
Ingredients
Instant rice, cooked and cool
1 Tbsp Oil for stir frying
1 Onion, mince
2 cloves Garlic, mince
70g tomato paste
1 tsp smoked paprika
salt to taste
450gm frozen green beans, defrosted
2 sticks Carrots, sliced
Method
1) In cooking pan, on medium heat, heat up the oil, saute mince onion until transparent. Add in mince garlic. Cook until fragrant.
2) Add in sliced carrots, cook for 5 mins. Then add in green beans and cook another 5 mins.
3) Next put in the tomato paste, smoked paprika, salt to taste and a little water, cook for another 2 mins.
4) Finally add in cooled cooked rice, mix well with spice and paste-. Cook until rice is hot.
5) Serve hot.

Zucchini & Cheese Bites
I have to say I'm one of those people that don't eat enough of zucchini . The funny thing is I actually love zucchini but some how I only eat them when someone else had cooked them; which is not frequent.
With this recipe I'll be buying and cooking them in my kitchen this summer and the coming ones. They are great for meatless days!
Zucchini and Cheese Bites
serves : 4

Ingredients
+/- 600gm Zucchini (I used more)
1 tsp salt
1 pinch of black pepper
1 tsp garlic paste (used granulated garlic)
1 large egg
100gm grated cheese (used cheddar, will use a more intense cheese next round)
4 Tbsp bread crumbs
++ sauté onion
For breading
3 Tbsp flour
1 large egg
5 Tbsp bread crumbs
Method :
1) Grate zucchini into a fairly large bowl. Sprinkle the salt all over. Let it sit for 15 mins.
2) Strain away the liquid from zucchini as much as possible. Return grated zucchini to bowl.
3) Put in black pepper, garlic paste, sauté onion, crack-in the egg, grated cheese and bread crumbs. Mix well. shape into a bite-size balls. and place on a plate.
4) Coat each balls in this sequence first into flour, then egg and finish with a good coating of bread crumbs. shake of excess crumbs. Place on a plate. Repeat coating process until zucchini mixture is finished.
5) Heat up the oil in frying pan. Fry until golden brown. Serve immediately.

Baked sweet potatoes
The humble sweet potatoes are a luxury over at this part of the world. With the rising food prices, we only buy certain foods when on sale. The sweet potatoes is one of them. Back home, sweet pototoes are either eaten steamed, barbeque, fried or cooked in a sweet ginger soup. This time I've decided to bake it. Though not crispy, it was very good accompanying the stuffed pork.
Baked Sweet Potatoes
Ingredients
Sweet potatoes, as many as you like
drizzle of oil
salt
black pepper
Method
1) Pre-heat oven at 180˙c at least 20 mins. before baking
2) Peel the sweet potatoes. Then either cut into 1-cm thick match stick, into wedges, or rings.
3) Drizzle some oil onto baking dish. Lay the sweet potatoes into 1 layer, do not overlap. drizzle a little more oil. Sprinkle the salt and black pepper all over.
4) Put baking dish in oven and bake for 15 mins. after 15 mins. take out and turn over the potatoes to the other side and bake for another 15 mins. or until cooked.
5) Serve immediately.

Simple sweet and sour salad dressing
Simple sweet and sour salad dressing
whisk together
2 Tbsp olive oil
1.5 - 2 Tbsp sugar (brown, white or palm)
5 - 6 dashes of white vinegar (or half - 1 lime, adjust to balance sweet and sour)
a pinch of salt
freshly ground pepper
few dashes of chilli flakes , to taste
1 spring onions, finely chopped - green part only
few leaves of parsley, finely chopped

Broccoli and Lemon chicken with toasted seseme
Broccoli Lemon Chicken with Toasted sesame seeds
Inspired by BBC Good Food
Ingredients
1 tbsp groundnut oil or sunflower oil
340g pack of chicken breast fillets , sliced into strips
2 garlic cloves , sliced
1 tsp ground cumin
200g broccoli florets
200ml chicken stock
1 heaped tsp cornflour
1 tbsp clear honey or 2 tsp golden caster sugar
the zest of half a lemon and the juice of a whole one
a large handful of toasted sesame seeds
Method
Heat the oil in a large frying pan or wok. Add the chicken and fry for 3-4 minutes until golden. Remove from the pan and add the garlic, ground cumin and broccoli. Stir fry for a minute or so then cover and cook for 2 minutes more, until almost tender.
Mix the stock, cornflour and honey or sugar well, then pour into the pan and stir until thickened. Tip the chicken back into the pan and let it heat through, then add the lemon zest and juice, and sesame seeds. Stir, then serve straight away with basmati rice or noodles.

Israeli couscous {Tarhonya} w bacon and Peas
I had planned to make risotto one day , then changed my mind due to
shortage of time. Since I still wanted to use peas and bacon as the
complimentary ingredients, I thought that Tarhonya (a type of Hungarian granulated pasta ... almost similar to couscous) would make a very good substitute for risotto.
This dish can not be easier while the result is so satisfying!! - I just LOVE the nuttiness from the oven-toasted tarhonya :)
Tarhonya with bacon and peas
Ingredients
Oil , for sauteing
Bacon, about 2.5cm cube - sliced
1 onion, sliced into half ring
3 cloves garlic, minced
1 tsp smoked paprika
Tahonya pasta , I didn't measure ... it was enough for 3-4 servings
peas, 2 handfuls
chicken / vege stock - double the measure of pasta (or according to liquid required per package's instructions)
salt, pepper - to taste
Ewe's cheese
Method
1) Brown tahonya pasta in pre-heated oven at medium heat for about 10 mins or until brown. Set aside.
2) Heat oil in pan , sauté bacon until slightly brown. Add in onion and cook until translucent. Lower heat and put in the minced garlic and smoked paprika. Stir until fragrant.
3) Pour in chicken / vege stock and bring it to a boil. Once stock is boiling, pour in the pasta and stir it couple of time while it is cooking. Cook until pasta is ready.
4) When pasta is ready, adjust seasoning at this point. Next pour in the peas, stir and switch off the heat, put on the lid and let it rest for a bit. Check for readiness of peas before serving with sprinkle of ewe's cheese.

Asian Spicy Pickled Vegetables {acar-acar}
Whenever I have excess cauliflower I like to make this pickled salad to accompany meat dishes.

As I intend to eat the salad on the same day that it's prepared, I didn't follow the usual process of pickling. What I did was ...
Spicy "pickled" vegetables
Ingredients :-
Cauliflower
Cucumber
Carrots
ginger
garlic
vinegar
sugar
turmeric
fish sauce
spicy Hungarian chili paste (erős pista)
sesame seeds, toasted , for sprinkling
Method
1) Blanch the cut vegetable in boiling water. Start off with carrot (longer to tender) followed by cauliflower and finally cucumber. Do not over cooked as you want a little bite to the vegetables.
Set aside to drain off excess liquid on a kitchen towel. Put aside some of the boiling water to wet the salad later.
2) Grate ginger and garlic. Heat a little oil in a pan and saute the grated ginger and garlic. Once fragrant, sprinkle a pinch of turmeric and stir a bit. Next add in the spicy Hungarian chili paste, sugar to your taste and few dashes of fish sauce (not too much , as the sauce is very salty). Set aside until assembling salad.
3) Place drained vegetable into salad bowl, splash a few dashes of vinegar, and add in the cooked spiced mixture . Coat salad evenly. Taste to check the balance of sweet and sour. If needed add the water earlier.
4) Sprinkle with toasted sesame seeds before serving

Steamed savoury egg custard
Steamed eggs custard regularly appear on my mom's diner table; however, I
have never have the urge to make one since moving out. Then I stumbled
upon this recipe ; which looks so simple and manageable plus promises a
smooth silky finish, so I say why not make it?
Verdict : wow, so smooooth plus an extremely easy recipe! The most attention you need is making sure the water do not get too hot. That only takes up 15 mins. of your time.

1/4 teaspoon salt
1/2 cup water, plus more for filling pot
1/2 scallion, chopped
1/4 teaspoon toasted sesame seeds
Combine the eggs, salt, and 1/2 cup water in a heat-safe ceramic bowl, such as a ramekin or small ddukbaegi. Whisk until well combined and foamy.
Place the bowl in a pot. Fill the pot with hot (not boiling) water to come halfway up the sides of the bowl. Cover the pot, preferably with a clear glass lid so you can easily watch the water and eggs. Cook over low-medium heat for 12 minutes, making sure the water stays at a gentle simmer.
Sprinkle the scallions and sesame seeds on top of the eggs and continue to cook for about 3 minutes or until the eggs are set. They should be firm but jiggly.
Carefully lift the bowl from the pot and serve.
Some variations:
• Add chopped vegetables like red bell peppers, carrots, zucchini, mushrooms, or onions to the egg and water mixture
• Add gochugaru (red pepper) along with the scallions and sesame seeds
• Substitute brined baby shrimp, fish sauce, or soy sauce for salt
• Substitute stock for water

Spaetzle { nokedli }

100gm Plain flour
1 large egg
60ml water
salt, to taste
a pot of boiling water
Method :-
1) Bring a pot of water to a rolling boil, don't forget to season water with salt.
2) In a bowl , place the flour, and the crack the egg in the middle. Add a little water, and with a wooden spoon combine by pushing the flour towards the egg. Add water as you go until a not too runny consistency.
3) When water boiling, place spaetzle maker over the pot (see link for instructions) and push the mixture over the hot water.
4) You should be doing in batches, and remove dumplings which have floated.
5) Rinse with cold water to get rid of some starch, drain and serve.

Chinese style Angel Hair Pasta
Fried vermicelli rice noodles is comfort food for the Cantonese. We eat
them in the morning, afternoon, night and sometimes even during parties
as the noodles could be pair with endless flavours. Since it is harder
to get vermicelli made of rice flour in my area, I have learned to
substitute with angel hair pasta whenever I crave the Cantonese staple.
I will not be including a recipe in this post. What I do is I toast the pasta first either on a skillet or in the oven for maximum 10 mins. on medium heat or until pasta is browned. Next you simply cook the pasta per package's instructions, once cooked to al-dente, you toss it in Asian-inspired aromatics and you're good.

Vegetables Croquette
Vegetables Croquettes
Makes : 12 Croquettes
Receipe from My Kitchen Snippetsy
Ingredients:
Vegetables to be roasted

800gm potatoes
2 carrots
1 onions
1 Kolhrabi
2 cloves of garlic
1-2 tbsp of regular breadcrumbs (added sour cream as mixture too dry)
3 spring onions – chopped
2 tbsp grated cheddar or parmesan cheese
Salt and pepper to taste
For coating:
½ cup flour (omitted)
2 eggs – beaten
2 cups regular bread crumbs
2 tbsp grated cheddar or parmesan cheese

1. Roast vegetables on medium heat (180°c) until golden and al-dente (30 mins + 20 mins. + 15mins)
2. Put the roasted vegetables in a food processor and give it a few pulses. It should not be too fine.
3. Remove and add in the spring onions, parmesan cheese, breadcrumb (if
needed), salt and pepper. Mix well. Shape the mixture into croquettes.
4. Let the croquettes rest in the fridge for 15 minutes. Heat up oil
over medium high for deep frying. Dust each croquette with flour, coat
in beaten eggs and then roll it on the breadcrumb.
5. Heat up some vegetable oil over medium heat for deep frying. Working
in batches to avoid crowding, fry croquettes, flipping once, until
golden brown, 1 to 2 minutes total. Using a slotted spoon, transfer to
paper towels to drain. (Adjust heat between batches as needed to keep
oil at a steady temperature.)
6. Serve warm or at room temperature with your favorite dipping sauce.

Spinach & Potato Cake
I have misplaced the link to this recipe but I'll look again and give the proper credit when I've found it.
Spinach & Potato cakes
Makes : 10 cakes
450gm fresh spinach, blanch and chopped coarsely, cooled
2 medium potatoes, boiled, mashed and cooled
1 small onion, finely sliced (I used spring onion)
2 eggs
6 Tsp herbs/spices (I used garlic powder, cumin, smoked paprika)
2 fresh green chillies, finely sliced
Fresh coriander, finely chopped (I used parsley)
2 Tbsp flour salt & pepper, to taste
Bread crumbs for coating
Vegetable oil, for frying
Method
1) Mix everything except for bread crumbs until well combine. Let it rest for 30 mins.
2) After 30 mins. start heating oil. Meanwhile start shaping mixture into balls and coat with bread crumbs.
3) When oil is hot enough, fry until golden brown.
4) Serve hot with yoghurt, chilli sauce or sour cream.

Mango and Apple Salad
This salad was adapted from salt n tumeric 's recipe with couple of substitutes. The combination of aroma of lime , spiciness of Erős Pista , sweet and soury apple and mango make this a great dish as an appetiser.

Ingredients:-
1 mango , roughly grated or julienned
1 apple , roughly grated or julienned
1 red onion, chopped
1 juice of lime
sugar , to taste
fish sauce , few dashes
Erős Pista (Hungarian sambal oelek ?) , to taste - substitute for Thai chilli
Peanuts , roughly ground
Prepare all ingredients and toss them together. Voila!

Crunchy Peanut slaw
Yummy new recipe from here !
Alterations :-
1)
I didn't follow the quantity exactly but based the quantity on my own
preference. For example, I dislike using too much of sesame oil which
I've reduced to only a few drops.
2) Replaced rice wine vinegar with white vinegar.
3)
Replaced corriander with parsley. Not available in the shops near me*
sigh* ..with corriander the taste would have been more interesting for
sure.
Crunchy Peanut Slaw
serving: 1 big bowl of slaw, serves at least 8
Ingredients
1 medium head green cabbage, outer leaves removed
1 1/2 cups roasted, unsalted peanuts
1 bunch green onions
1 cup chopped cilantro (about two big handfuls unchopped)
Salt and pepper
Dressing:
1/2 cup light oil, like canola
3 tablespoons rice vinegar
1 tablespoon sugar (or more, to taste)
1 tablespoon sesame oil
1 teaspoon soy sauce (or more, to taste)
Method
Shred the cabbage very finely. The fineness of the shredded cabbage is really what makes this salad; you want it in in threads, almost, and with the threads chopped into bite-size lengths. Toss with the peanuts in a large bowl. Chop the scallions, including the green and white parts. Toss the scallions and chopped cilantro with the cabbage, seasoning very lightly with salt and pepper.
Whisk the dressing until emulsified, then taste and adjust to your own preferences of sweetness and saltiness.
Toss with the cabbage. Garnish with a few more peanuts and serve.

Red Onion Relish
I tweaked the ingredients a little based on what I have in the fridge. Here's the recipe
Red Onion Relish
adapted from BBC Good Food
Ingredients
juice of 1/2 lemon
4 pickle red chillies (an asian brand-vietnamese specifically) , slice finely
small handful flat-leaf parsley leaves
1 small red onion, cut into wafer-thin slices
a few dashes of fish sauce
1 tsp sugar
freshly milled black pepper
just toss all ingredients together and top it on the hamburger!
